Oatmeal on the Go: Apple & Cinnamon Baked Oatmeal

apple_cinnamon_baked_oatmeal-impIs it a muffin? A mini cake? Breakfast or a healthy snack? This Apple & Cinnamon Baked Oatmeal is multi functional, full of fibre, protein and perfect for on the go or feeding a crowd.

I have tried a few baked oatmeal recipes and they tended to be too moist or too messy to bake but this one turned out great and got 4 thumbs up.

I love this recipe because it was super easy, I had everything on hand and it all mixes up in one bowl. Protein and fiber is an important part of a healthy snack and filling breakfast and this baked oatmeal is perfect.

They are denser than a muffin as there is no flour and they really taste like a bowl of apple & cinnamon oatmeal.

Apple & Cinnamon Baked Oatmeal

2 cups oats
1/4 cup ground flax
1/4 cup oat bran
2 tbsp chia and/or hemp seeds
1 tsp baking soda
3 tsp cinnamon
2 cups almond or regular milk
1/4 cup honey
2 large or 3 medium apples

Preheat oven to 375 degrees. Mix oats, flax, oat bran, seeds, baking soda and cinnamon together. Add almond or regular milk and honey.  Let sit so while you wash and chop the apples into small pieces so the oats can absorb the milk. I like the added fiber so I don’t peel the apples, but they can be peeled if you prefer.

Add the apples, mix well and pour into a 9×9 silicone baking dish or muffin tray (silicone is non stick – no oil or flour needed and muffins or cake will fall out).

Bake for 35-40 minutes until baked through. It will be very moist. Serve warm, or store in the freezer to be popped into kids lunches for healthy snacks.
