With 3 kids in school, I knew I would need a lot of school snacks. Wanting to avoid pre packaged snacks that were not only costly, but also void of much nutrient value, I started baking for their school lunches. In the 3 years I have been doing this we have found some favourites that are healthy (not too much added sugar, oil or butter and made with whole grains and fruit) and the kids love.
*Tip – Bake as mini muffins and freeze so kids can grab and add to lunches on school mornings.
Oatmeal Applesauce Muffins
1 ½ c oats
1 c whole wheat flour
¼ cup oat bran or flax
1 tbsp chai or hemp seeds (optional)
1 tsp baking powder
1 tsp baking soda
1 cup applesauce
½ cup milk
½ c brown sugar
3 tbsp extra virgin olive oil
1 egg white
½ cup chocolate chips or raisons
Preheat oven to 375 degree. Combine oats, flour, oat bran or flax, cinnamon, baking powder, baking soda and chia/hemp seeds if using in a large bowl and set aside. Then whisk together egg white, applesauce, oil and brown sugar. Stir in milk, then add the wet ingredients to the dry. Mix until combined and add raisons or chocolate chips. Bake for 15 minutes. Makes 26 mini muffins or 12 large muffins.
*Tip – I use silicon baking cups, muffins literally ‘fall’ out with no greasing or flour necessary. Perfectly baked muffins every time.
